 *Grilled chimmichurri chicken thigh, pork chop or cauliflower steak, mashed potatoes & broccoli

*Rustic tomato, corn & jalapeno (vegan), cilantro yogurt

*Chicken & roasted vegetable (IE staple!)

*Mock tuna salad (chickpea, carrot, celery, pickle, herb mayo/vegan), greens & crostini

*Apricot chickpea salad: greens, carrot, red onion, feta, pepita, & honey cumin dressing

*Asian tofu salad: greens, cabbage, cucumber, red pepper, red onion, peanuts & sweet sriracha dressing
